How hard it it to pull a steering wheel and replace it with a restored one? Any instructions or guides will be greatly appreciated.

Its really easy to do
1) Remove center pad (3 phillips head on back of wheel)
2) Pull center horn pad off (press fit on)
3) Unhook horn button
4) Loosen 3 nuts
5) Pull Wheel off
Heres a video with aftermarket wheel which should give you an idea but you do not need to remove crush can if you are just swapping wheels.
