Build it for you , I would do a resto Mod make it fun to drive & drive the wheels off it .
 Too bad you are moving to AK next year , Alaskan T/A / Barry was trying to sell his house & move out for a long time . he was in Ketchican , Not sure where you are headed to .

First off thank you for your responses. The links and videos posted were great and something I would base mine off of.

I'm leaning towards keeping it now and selling off the 70' Morris Mini. Anyways my thoughts for the moment have been mainly on the exterior and the suspension.

-Suspension: Do a refresh with new bushings and keep it mostly stock. Maybe upgrade the springs and add a sway bar. Nothing too exciting for the time being. Likely I'll keep the wheels currently on it, or swap to steel wheels depending on the tires I go with.

-Exterior: As mentioned before I'm not really keen on shiney paint. I like the idea of a matte paint, most likely in a red of some flavor. Originally the car had R/T stripes and a vinyl top. I think that would give it a nice look and keep it similar to factory. What do you think of that idea, would it seem out of place?

I really like flat paint, I like the look of old barn finds, with worn stripes etc. I would go restomod with good suspension, brakes and steering, and an almost patina flat, old looking paint job.

I would upgrade the suspension using mostly stock or upgraded similar components , 1 piece stamped control arms do not break @ the weld for example , hollow F&R sway bars , larger T bars , & new adjustable shocks  etc can make these cars handle very well

Hmmmm! I like flat paint too.    

The materials to paint my car, Satin Black (1 gallon), hardener, masking tape and paper, cane to a gran total of $117, tax included.  Plus I painted it in my driveway.  I get a lot of complements on it.

One direction you could take it is a hopped up, worn 70's look. Think the original Phantasm Cuda, as it had a pop up sunroof. Make it a fun driver with a 440 or built 360 if you want handling. Doing a restored over the top resto is going to cost  a lot and take some of the fun out of driving it anywhere and everywhere. As others have mentioned stick with the plan.
