Though I'm only familiar with shops in Northeast WI, I would highly recommend John Balow's Muscle Car Restorations in Chippawa Falls, WI. It is a premiere restoration shop that probably charges a high rate, but the end results always turn out awesome.
If that's too far to travel, here are a couple places more towards the south, though I've never dealt with any of them. They seem reputable, but only seeing some of their previous projects can tell.
