Could it be Too Lean ?

ok may be a dumb question, but better safe than sorry.
IF my 440- six pack car is only operating with it's 350 cfm center carb, could I damage the engine under hwy. or performance situations by it running too lean?
Or would it just run short of gas and die? Is that different than running lean?
I have not confirmed that my outboards are opening or not.
Running ok, but not scarey fast.
Took a Mopar neighbor who used to own a 440-6 'cuda for a ride yesterday, and he didn't feel they were opening or the timing is retarded too much.(not scarey fast)
Anyways...any danger in regards to Lean operation?
Plugs look ok, but they're new.

air flow is related to fuel flow so if you are for some reason only running the center carb that will not make it lean as long as the jets in the carb are rated correctly for the air flow through the carb

nope
 where the the secondaries connected to ?
there are 2 ports side by side , the upper one with the Tube is for the dist , the lower is the outbards , it will not work correctly hooked the other way

took a couple of minutes in the garage, but here's how she's sitting now..
(disconnected the breather hose for clarity)

since you can't tell if the outboards are opening with it in the garage, whats the best way to know if one or both are opening?
I remember someone posting about putting a paper clip on the vacuum shafts, running it and seeing if they get pushed down...is that the best way?

Paper clip works
I cannot see a reason why they wouldn`t be opening unless there si a problem with the linkage on the other side or the diaphragms are torn inside the secondaries  , you should be able to hear the secondaries open , the induction noise with them all open is huge
