I can only make a suggestion as choosing an oil is like choosing gasoline. I my self use Royal Purple. I also use Royal Purple for all of my fuids. http://www.royalpurple.com/homea/homea.html
I have a friend that uses Castrol full synthetic.

if you have more than  4000 miles on the engine since rebuilding it Synthetic is the best
the problem with new oils is the lack of Zinc & phosphorus , Royal Purple & Redline have high quantitys of both , I have been using Castrol SYntec 5-50 for a long time as well. You can also add the Zinc & phosphorus by adding Gm EOS or Comp Cams has an additive as well

Do you still need oil with zinc after breakin?  What if switching to synthetic?

yes you still need ZInc & phosphate to keep the lifter & cam lobes apart under high load
most synthetic seem to have enough additives in them but it varies with each manufacturer

I think it's all personal prefence... I only use 10w-30 Q-state dino because of using for it for 25 years, all ways works good, no problems,cheaper.. my buddy will only buy Penzoil because thats what our fathers bought...There is too many darn choices now....5-10-15-20-40-50 uggghg. Maybe someone can enlighten me why to try something different?
Maybe we should start the dino vs syntec vs blend chat.........
