Correct operating temp for 383?

Only recently fitted a Mopar Perf' temp gauge which showed that the factory gauge under-reads considerably.  Concerned that the car is running hot as I retained the 22 inch radiator from the 318 but had it upgraded to 3-core high efficiency.  Car runs between 190f to 210f and temp pushes 210/215 after a periods of acceleration or cruising at 60mph+.  Has good coolant levels (possibly too concentrated).  What is normal operating temp for a 383??

under 220 is fine , I generally use a 180 T stat & try to keep it in the 190 - 200 range
 try using a clutch fan , A shroud could help as well

Thanks Chryco,  Running shroud and clutch fan and have set up overflow bottle.  Will check thermostat is correct.

Also, if you run hard, then come to a stop light, if your idle is 700 rpm, then you may tend to everheat. If you increase the idle, you will increase cooling flow and airflow.  Also, vent your engine compartment anyway you can, so air will move through your radiator easier.  Each engine has its best operating temp, to make the most power. See how it runs with a 160 degree, then try a 180 or 190.
