You 2/3 problem is called flaring, and it can mean that the 2nd gear band is loose, or gone, or the 3rd gear clutch is gone/going, or the valve body isnt setup right (if it still has a "Drive" 3rd gear). If they adjusted it, it's not a good thing.

that forces me to ask another stupid question
.
if this is a manual body, should it go directly into second at an idle? the reason i ask is it goes into first until about 10mph.

In my manual valve body it stays in first till I bang 2nd and so on......... I think of a fairbanks automaitc I believe its called you put it in D and it goes through 1-2-D ... when just smashing the pedal.... its a little different from a regular auto..... The manual valve body will not shift until you shift it... hence "manual" valve body .......

so with yours [stroker] if you shift to second at an idle will it go into second or do you have to get moving? the reason i ask is i don't know if i actually have a manual body, the guy said it did but i realy don't know and if i don't have a manual then this may explain my tranny issue.
is there any other way to tell without taking the tranny apart?
