How many blades on that fan? I noticed that you have an eddy rmp airgap. Mine started to run 210 degrees since I changed from factory to the eddy intake. Trying to get it to cool right. 
I'm using a stock replacement fan from Autozone along with a HD clutch. It never runs hot, actually it gets to 200 after a couple runs at the dragstrip.
What temp t-stat did you use? I think a 195 was stock, you could try lowering it to a 180.
Also maybe you need to tune the carb with the new intake, it could be lean due to the better flow and create a overheat condition.
