Who's Hungry?

Thought my Carlisle brethren might enjoy this story...

Apparently, my area of PA has a tradition of Pork and Sauerkraut for New Years dinner.  My mother always did a nice ham, but for just my wife and I - we've never bothered doing anything too fancy or traditional.

Well this year I was going to bread and fry up some veal scallopines for veal parmigiana, but my veal didn't last as long as I had hoped.  So I went to the grocery store on New Years day and found some discounted Pork and Sauerkraut.  "What the hell.." I thought.

So I rubbed the pork roast with a combination of cilantro, cumin, allspice, rosemary, salt and pepper, then seared the meat in a frying pan with a touch of olive oil until just short of burning.  Then I placed it in a small, glass roasting dish, poured in a few cups of apple juice, a sliced sweet onion, and fresh-minced garlic.  After roasting in the oven for 2 hours, I removed the soft onions and about a half-cup of the applejuice/garlic mix, and placed this in a skillet.  I added the sauerkraut and brought it to a boil, stirring constantly.

As I took the roast out of the dish, I was worried that the outside felt very tough and dry.  I thought that it would be another dissapointing roast.  Then my knife cut through the roast like melted butter, and I knew we were in for a treat.  Since searing the meat traps the juices, that roast was amazing.  I served the 'kraut over a bed of my homemade, season-loaded mashed potatoes, and a side of some baked beans.  My wife doesn't like sauerkraut - she cleaned her plate!!

So, who still wants me to cook at Carlisle 2009?   :bigsmile:

Ya know, there are people out there who make a LOT of money doing just that...  ;)

I hope to go to Carlisle for a while but I will after I get my car done.  Sounds good as for as food.  Not much of a choice over here!!!!

That sounds AWESOME Jeff. So do you have some culinary experience or just read a lot of cook books?? Was the pork an off-the-cuff thing or a recipie you read?? I love to cook and used to cook in a restaurant. It wasn't fast food, but I wasn't a "chef" either, but always enjoyed it. Sounds like you too have a talent for cooking!! :2thumbs: :2thumbs:

Yup, the lady and I do alot of cooking too.
Just a few days ago she cooked up an old world pork recipe.
Paprika paste, pork chunks, onion and some good quality sour kraut all stewed together. Man was that ever good.

We used to celebrate New Years with some people from Pittsburg, they always made sauercraut & brats.  I don't like sauercraut, so I hope you just stick to burgers for Carlisle, Jeff.

My late Father used to cook up sauercraut and pork on New Years Day. I always figured it was a German thing from his heritage, but maybe it was a Pittsburgh thing?   :dunno:  Anyway, that sauercraut can have some fun with your digestive system.   :eek7:

I used a native Pennsylvania Sauerkraut that was much more mild than I had experienced in the past.  Also, I used some "sweeter" spices (like Marjoram) and also the apple juice to soften the blow from the Sauerkraut.  The sweetness counteracts the sourness.

I have a bunch of cookbooks and I watch a LOT of Food Network.  Over the holidays they had some "viewer questions" submitted that Bobby Flay answered - gave me some good tips on searing, roasting, etc.  I HATE watching that channel - it makes me SO hungry!  But it's good information, so it works out in the end.  :)
