If I mash it to the floor it flies off the line. If I light depress the pedal, it stalls. Would my primaries be the issue?

Well yes & no
it has to do with Accelerator pump & float level
So may be we should start with What make of Carb

Figured they all do that
you can install a bigger squirter , but Eddy forces you to by a pack of 3 to get it , pull the top off the carb to change the squirter ,& check / raise the float level slightly , it should be 7 /16 raise it 3/8

Alternatively it could be the rod springs are allowing the rods to stay down too long as it comes off idle.
I had a 750 AFB (basically the same as your Edelbrock) that was doing exactly what you describe. I went one stage heavier on the rod springs and it cured it.
If the springs are too weak then increasing the pump shot may appear to cure the problem but actually you will only be masking the real problem so it may be worth trying different springs first.

It's worth a try, and while I'm thinking about it another thing to check on these is slack in the squirt pump linkage. If there's slack the squirt lever doesn't get moving enough when you crack the throttle only a little way. It shouldn't happen unless someone has been playing with the carb, but at least it's easy to check and easy to fix.
