cooling system cherokee 5.7 problem

my neighbour has a nice cherokee 5.7hemi. It`s got a strange overheating problem ever since he removed the radiator cap/ bleed cap   :dunno:
One moment good temp and the next the fan kicks in and the upper rad hose collapses and temp shoots up. After a little while the hose filles again and temps drop like a brick to normal.  My guess is it`s got air in the cooling system, but why did this happen after removing the cap, and how do you get the air out?  The jeep has 12000 mls on it.

It should have a bleed port high on the engine , torx or allen plug not sure where though
