Well I got it on the road today and it's running well. I'm pulling about 12-12.5 mpg. I I could even squeeze 15-16  mpg out of it it would technically be an improvement from current mpg from my current daily driver.
In addition to the gearing , I would say your current engine will hold you back. My new engine on the hwy I'm barely pressing the throttle to maintain 65-70 MPH and 17 MPG ...the old motorhome engine I had to use much more "pedal" and it got about 10 MPG. Engine needs to be as efficient as possible to get the best mileage.

I think you can realistically achieve 15-16 with taller gears, overdrive, a good tune-up and carb rebuild/tune.

As with Brads build the right selectioniof parts in an engine can make a huge difference in the efficiency  , we built one 512 CI stroker getting close to 18 MPG even @ 70-80 MPH on the highway  , tuning also plays a big part .
