I built a honda chopper a bunch of years ago. It was a fun project, but I ended up hating the bike. I like speed more than the sub speed limit cruise and bar hopper ergonomics. I couldn't ever get the carbs perfect. Especially with individual air filters. You may want to put a one size larger main jet in the center carbs because they will run leaner than the outboard two due to heat. Or better yet, upgrade to the vacuum operated ones on the later 70s bikes. Your bike looks great though.
If this is your first motorycle, take a course and really learn how to ride before you go and try it. Read "A Twist of the Wrist" by Keith Code this winter. It has racing principles, but all those principles can be applied to street riding. Applying the concepts while learning will make you a smoother and safer rider. Even on a vintage bike like that.
