I've always found it easier to leave the rear wheels on the car. Do one full rotation of the wheel and count the rotations of the yoke. 3:23's would be 3 1/4 while 3:55's would be 3 1/2, pretty easy to tell the difference.

I agree with the wheel turn method, but Cruzin said the rear is apart.  The correct gear ratio should be stamped on both the ring and pinion.  The number on the case ending in 741, 742, 489 only tell you the size and type of pinion (http://www.mymopar.com/Mopar8_75RearEndGuide.htm).

counting revolutions of the pinion yolk ONLY works if either both wheels are turning equally as in sure grip or if one wheel is held still & you turn the wheel 2 full revolutions otherwise it can be inaccurate
