I live at 5700 ft. I race my car up to about 9-10K.  I do lose some power at the higher elevations,that's where the ricers die and my 340 chews em' up.  Tuning is everything up here.  I've always wanted a six-pack set up but...            I'd have to say that if you didn't re-tune the carb/timing...no way.   no way.

OK Here is a little info....
On my "simulator" I put a 500wedge 575 HP in a 71 cuda weighing @ 3800lbs....D.O.T. drag radials
Put in your exact specs you listed and here are results...

3000ft 25% humidity 60* temperature
reaction time .524 12.07@115.07

500ft  85% humidity 60* temperature
reaction time .530 11.36@122.70
