Welcome to the site.  Sounds like your float level is too high. Fuel should just dribble out if the sight plug.
If I cant fix it, it's broke

no sight plugs on an Eddy
I would look at a Proform 750 or the Holley 82751 HP street carb , Mancini has the best price on the Proform

Got my tuning kit for the eddy gonna see how that goes before rippin the carb out...but im still worried about my rpms...On take off when i release my clutch my rpms shot down and theres hesitation i dont know why  i had the same problem before the rebuild too i figured after taking everything apart and all the new parts i woulda resolved the issue....

Talkin bout carbs is there a difference on installing the carb in with a spread board gasket(340 oem) compared to a square board gasket?????

sounds ot me like you need more pump shot as the throttle is opened so you either need to adjust the pump arm or install a larger squirter
it makes no difference which gasket is used as long as it seal all the way around the edge of the carb with no leaks & doesn`t interfere withthe throttle blades opening or closing
