does anyone know how to get the old center disk out of the center cap of the magnum 500s so that I can put a new disk in there?

If the cap is pot metal I doubt it could , if it is plastic it should still be OK as thinner often comes in plastic containers .
A heat gun might soften it also ,
I have never tried it .
