Yeah but different pistons means the block fit could be off....  If you cut the head  .030 on the main surface & the intake side of the head .028 the port alignment shouldn't change...  There is no perfect solution but in the end do what your comfortable with...

With that short of a piston, you may not have enough material on the underside to cut the valve pockets deeper.  You can only enlarge them, but since they are already to the outer edge, you really have no where to go.  Now, you're back to creating a dish.
