For Those Who Love BBQ

If you love cooking BBQ like i do check out ::: bbqpitboys.com on youtube. I have grilled up some of their recipes and they are guud!!!

The best trick I learned on BBQing is to cook the steak rare to med rare then sear it in a pan with butter to finish it off.

I will have to check them out.  My daughter gave me a small smoker for Christmas. We did some baby back ribs on it yesterday and they were yummy!  :drool:

Whatever you do, don't use Hickory on Chickens, Turkeys, or fish.

I used Hickory wood on a Turkey and it ended up tasting like Ham.

Alder wood will mellow the smoke flavor so it doesn't become so powerful.
I like to mix it with others like Cherry wood, Apple wood, Maple, and Mesquite.

Mesquite on chicken is the way to go IMHO!

Smokers are great for bringing out out the flavors in whatever you are cooking. Low (temp) and Slow (time)! :thumbsup:

Garlic paste
Sriracha, Uncle Chen Hot Sauce. (watch it! Hot stuff!)
3 colored pepper
paprika
Everett & Jones BBQ sauce (The best there is!)
Seasoned salt
Worcestershire
Balsamic vinaigrette
Montreal Chicken seasoning
Anything else? Go ahead! I mix many things.

Dry rub ingredients on. Let sit for 1-2 hours
Mix wet items separate including garlic paste together stirred up and leave in a small bowl.
BBQ sauce is the key flavor: Everett & Jones

Spray Pam BBQ spray on chicken before putting on Q.

The key is slow cook it as first and keep them doggies moving!
Once they get color, kick up the coals a bit. Cook it, don't burn it.

Once they look like they're almost done, baste on the wet mix.
And you're in Yum city!

I've had some amazing smoked meats... And I have a sister who smokes meats regularly... Unfortunately her smoked meats taste like they were in a forest fire...

Yeh I have had smoked meat like that too, IDK something was wrong... too much smoke, not enough water in the pan. The smoked wood taste should be "there" but not overpowering (forest fire taste).  It takes practice to get it right. it's not easy at all.

I started experimenting 3-4 years ago and I never looked back after making this recipe.

The Everett & Jones BBQ sauce, medium hot is incredible.
They have 2 or 3 restaurants near here and they are packed 7 days a week.
The Raiders are known to go there after a win at Jack London Square. 

Try and see if you have it near you.
