Check this out, I think this would work well on a dash pad if you could get it smooth and flat

I cannot comment whether it will or wont, but the installer would be smart to know. For my application, that wouldn't be an issue as anything I would put it into wouldn't have a air bag. The product is out of Canada and it can be ordered in sheets. My goal was to figure out how to make my old pad flat and smooth, then wrap it in this material, instead I just bought a new pad.

Yeah almost something like this process:

http://www.usplasticcoatings.com/pvc_plastisol_coatings.htm

Where you could level and fill the cracks and envelope the dash with a thin layer of pvc  so you don't loose the detail  ...then wrap it with the leather wrap ..

Yeah that might work. If someone took the time to figure this out, I think you could make a business out of this. Not sure what types of covering material there is, but I am sure there are plenty which opens up options for the consumer, not to mention that you can change it (rewrap the pad) should you need/want to.

I think there are other similar products in other colors and textures. Watch one of those goofy custom car shows like Unique rides, they wrap dashes and door panels all the time and I am sure I saw them do carbon fiber once.
