the only drivers side header that is not a stupid design & goes under the steering is the TTi
your header is not bad at all , you should see my friends header the tube is reduced to less than 1/2 , I would leave your on for a while it will only gat worse

Should I go for the 2.5 inch or 3" system?

i have a 70 340, 4.08 cylinder bore (including .040 over), 3.31 stroke, 10.46 compression, TRW pistons, crane cam 691191, edelbrock torker intake, holly 750 4 barrel carb, timing 35 degrees at 2200 rpm. i think i should go 2.5 as i feel the 3" duel exhaust might make less power than the 2.5 inch. what do you all think?

2.5 or 3"?

IMO 2-1/2" exhaust system will be spot on for your set up.

You can always crank up the torsion bars a bit, or go with a little taller front tire, I hit on every speed bump until I put some 15' rims and a little taller tires on my car.
Also I noticed your collector flange that bolts to your exhaust pipes is ground down a bit. Can the exhaust pipe side flange be turned or is it solid to the pipe? If you can turn it you can put one bolt straight up centered at the top and two even at the bottom. It may be a pain to get to the top bolt but it will give ya a little bit more ground clearance, and every little bit adds up.
