Will a 727 off of a 440 BB bolt onto a 340 SB??? :clueless:

I don't think it will, there a small block 727s available, hence the reason I think this.
Maybe it's just a matter of a different flex plate, I'm not sure.....someone here will know.

Nope, the BB 727 had a different/larger bellhousing than the SB 727.  You should be able to find a SB 727 in a van at a local junkyard if you are lucky.  Not positive on the years, but I know they can be found fairly easily.
