I too think theres nothing wrong with a holley. As for them not "holding a tune". BS, my car is now in the garage for 1 to 3 weeks, goes out when the streets are dry and salt free, could be 25 degress outside or 80 degress. Motor will run just fine. The idle screws might need to be adjust, big deal, 1 min job. Jetting might not be prefect but the motor will run fine at all speeds.
Tuners who hate a type of carb have other problems, maybe its their set up, a weak ignition system, too big of a cam for a low compression motor, wrong type of intake or one that leaks. Sure some carbs are machined bad but that could be any brand.
DP are the best, if they are set up right, have enough gearing and are the right size. Needs a good strong spark to fire all that A/F that a DP will ram in the motor.
Thats why when somebody seems like not a top notch tuner and its for the street, I say get a vacuum secondary carb. They are more forgiving for street gears and a weak ignition system.
The type, Demon or Holley, I am sure a good tuner can get both types to run perfect. A 750 Demon might make a bit more power than a 750 Holley but thats only because how they are rated. Seems like a 750 Demon is bigger than a 750 Holley
