if you have not already bought the stroker kit I would back down to a 430 CI engine , 450" max , at 490" the oil ring is not fully supported by the piston & goes over the wrist pin , essentially this is now a race engine not a street engine
the power #s you want are basically easily within reach , for a sreet engine I would use Iron heads , they make a LOT Less heat under hood , I would find a Holley Street Dom intake , go to an 850 CFM Proform carb , the girdle kit is over kill , I would be looking at a Engle K58 / K 60 or K60/K62 hyd cam or an Ultradyne Grind for a flat tappet solid seeing as you have adjustable rockers anyway , no need to go to the expense of a Hyd roller IMO, I can help you pick a grind that will match the gearing & converter you have or want
