You can get one of those IR temperature guns and use it to measure the temp while it's running.  Checking the temp of the front of the radiator, hose, and the area of the engine near the sensor should give you a good idea of what the gauge should read.  Since you're not reading the coolant itself the readings will be a bit off but they should be in the ballpark.
