Not sure I'm nervous enough to remove the rotor all the time, haha, but indeed, for long term storage, that's a great idea. My problem with the insurance is that I don't have a daily driver, this is going to be my only car (because I really don't need one) and thus none of the classic car insurers would take me. So for now the car is only insured on actual cash value! I have the option to have it stated and then insured at stated value, which I'm going to do once I polished her up a little.
