well, being from the south, I take my meat and put it in ice water.
Then I change the ice water at least once a day for 1-2 weeks.
When I switch the water and ice, I massage the meat a little , get the joints moving and what not.
after a week or so, the meat has lost most of it's blood and soaked up water.
Adding a little weight to the meat and removing alot of the game taste.
If your family liked moose, they should like bear also.
One of the hardest things to impress on folks is that if you have eaten wild game once, and it was not good, is that the next time it could be really good.
The chef and processor make a huge difference in how an animal taste.
Not to mention, what ever they were eating for the season, or their whole lives, can change the taste.
My family is very picky eaters also. However, they loved my mule deer, white tail deer, and my mountain lion.
Make sure they are hungry, in the right frame of mind, and cook it good! They'll love it.
