well, being from the south, I take my meat and put it in ice water.
Then I change the ice water at least once a day for 1-2 weeks.
When I switch the water and ice, I massage the meat a little , get the joints moving and what not.
after a week or so, the meat has lost most of it's blood and soaked up water.
Adding a little weight to the meat and removing alot of the game taste.
If your family liked moose, they should like bear also.

One of the hardest things to impress on folks is that if you have eaten wild game once, and it was not good, is that the next time it could be really good.
The chef and processor make a huge difference in how an animal taste.
Not to mention, what ever they were eating for the season, or their whole lives, can change the taste.

My family is very picky eaters also.  However, they loved my mule deer, white tail deer, and my mountain lion.
Make sure they are hungry, in the right frame of mind, and cook it good!  They'll love it.

Oh, i'm rambling.  Sorry.  Guess I need to go get my late start hunting elk today.   :2thumbs:

I also soak my game in ice water... ice milk or buttermilk really helps with waterfowl.  Gets a lot of the game taste/blood out.  Usually replace the milk once and let it soak overnight.

I went with my buddy down to the King Ranch a couple weeks ago... his dad manages operations down there so we decided to go shoot a Nilgui.  We stocked this one for about an hour, a really fun hunt.  These animals are huge, fully gutted this one weighed 400 pounds! I have about 150-200 pounds of meat from it... It's a really really lean meat so I mix the ground hamburger meat with 15% beef then get sausage made with 60-40% pork mix.  It's to die for! Nice bear, congrats!

Thanks,

That is one cool animal there.
Curious if that is a trophy sized rack?
I would love to taste african animals.
What do those things cost to shoot?

They're actually native to India, but the population is endangered there.  There's more wild population here in Texas than anywhere else in the world.  I wouldn't know how much it cost, I got the hunt for free! The King Ranch is the largest ranch in the U.S. over 500,000 acres of low fence free range hunting.  Unfortunately, unless you pay good money or like me know someone who works there you're not going to get a hunt.

It's not a trophy size, a good mature bull, but nothing jaw dropping  :2thumbs:

You guys that hunt, do you go fishing also?

Colorado and the upper rockies must have incredible fly fishing.

I tend to go down in elevation when I fish.
Something about the lack of fight from cold water fish.

I have done some fly fishing and stream fishing though.
It's nice to go camping and catch brookie from the local creek.
I was close to the bushnelll lake on the Sange Di Criso Mountain range yesterday.
There is supposed to be great fishing in the bushnell lakes.
Check it out here.   http://www.fishingworks.com/lakes/colorado/fremont/bushnell-peak/bushnell-lakes/
Where the green trees meet the grey rock is where I hunt.right at the end of the road.
I will be there tomorrow.

Wednesday I will be here.  http://www.lat-long.com/Latitude-Longitude-189846-Colorado-Middle_Creek.html
I have caught many trout out of these beaver ponds and the stream.
OH yeah, lots of elk and bear.

So, yes, I do fish more that I had realized.

I live on the Arkansas river and rarely fish the river.

Sure do!
Lots of walleye in my area. After September 15th, bird season starts, so sometimes my buddies and I bring shotguns for bird hunting on the way to the lake, jig for walleyes for a couple hours, then shoot birds on the way home again. We call it "Cast 'n' Blast".

Went out fishing with family and friends for the long weekend. Winter took it's time leaving Ontario and maybe the walleye spawned a little later. Most of the walleyes we caught were 24" to 30". Big females. Great fun to catch 5-10 pound fish all weekend but had a tough time finding the 15" to 18" eaters.

Just moved to Covington for work which starts Tuesday for me.. Unfortunately the Challenger will get no attention for the next 3 months while I'm going offshore to the rig and working so much. Beer drinking this weekend though!   :drunk:

They let you fish of the rig so maybe ill have some cool stories to tell!
