Having driven & built all of them the 383 is less torquey but will rev fast with some gear in them, the 383 has less stroke than the 360
the 440 & the 440+6 pull everywhere , they pull hard off the line with or without gear & just do not stop pulling , built properly with enough carb 7000 rpm is easy for the 440 & it pulls as hard there as anwhere
Honestly most of the Hemis I have driven have Not impressed me , most people build them mild & do not run them hard due to the cost But the Hemi only works when it is run hard , with a mild hyd cam & detuned for street the combo is off & the heads start working when the cam quits , a 440 6 will kick its butt , the Hemi needs a solid cam , big converter , crossram intake with Holleys & some compression to be impressive , & they will impresss
I have a friend with a hemi car & the engine was built & he was totally disappointed with it , I went throught the combo & offered to fix it , he trusted me & let me swap the cam & retune the engine , the car is totally different to drive & he is exstatic with it now , it starts & runs far better than before
