Paint Interior and Exterior

I'm in the process of stripping the interior, everything is out and I'm sanding down the concrete like glue that is everywhere. My design is to have a stripped race inspired interior alot like the mustang in this photo http://bangshift.com/wp-content/uploads/2012/11/Steve_Strope_Martini_1966_Mustang_T5-R06.jpg   

As I'm stripping the paint there is alot of awkward hand sanding to get to bare metal, how do most people here manage flash rust when you cant just do the whole interior then prime it in one day? I only get to spend 2-3 hours a week doing a couple feet of interior here and there. Are there any rattle can primers good enough to do the final paint over? My biggest worry is that I strip everything cover it with paint to keep off rust only to have to resand it all when I finally am ready to properly paint. or even worse leave it bare and get rust everywhere.....

I'm currently planning (based on my paint jobber recommendation) on using PPG NCP280 primer direct over the metal and then PPG DelFleet evolution in Sassy Grass to achieve a durable and good looking finish. Is it worth it to try and carry over this to the interior? I was hoping to use a dull grey interior just like the Trans Am cars.....I'm in California so options can be somewhat limited.

After talking with the paint shop who basically recommended shooting tiny bits of 2 part primer everyday I talked to the fabricator I have been working with and he recommended I try this http://www.metalrescue.com/drycoat.aspx  it is a new water based rust preventative and should clean up with the wax and grease remover and a mild wash prior to actual primer and paint.

I also saw Gibb oils as a recommendation but the oil seems like alot of extra work and danger to clean up when I was ready to primer.

Anyone have experience with this? I've used the Metal Rescue to great effect, so I have high hopes.

Phosphoric acid based products will take care of the flash rust (Ospho, Pickelx, Metal Wash, PPG metal conditioner, etc.)  Most of them will allow you to keep the metal rust-free as long as it's in a dry place.

I'd avoid oils, that will only haunt you later with fish eyes in the paint

  I use Ospho because I tend to work slowly. Just try to keep it off your concrete. Kind of bleaches it out.
